Aceh Tengah, InfoPublik – Usaha Mikro, Kecil, dan Menengah (UMKM) binaan Koperasi Baitul Qiradh (KBQ) Baburrayyan mampu manfaatkan kulit kopi arabica Gayo sebagai produk unggulan kopi sehat.
Selama ini, orang melihat kopi arabika itu hanya biji saja dan tidak memikirkan untuk pengolahan sebagai produk yang lain. Ternyata, selain biji, kulit kopi juga bisa diolah untuk bisa menghasilkan potensi uang yang sangat banyak.
“35 persen dari biji kopi adalah kulit, daging kopi dan lendir kopi yang manis, biasanya dibuang-buang sebagai limbah. Sebagian kecil dari masyarakat Gayo kulit tersebut dijadikannya sebagai pupuk,” ungkap Manager Operasional KBQ Baburrayyan Mochammad Charis, Rabu (11/11/2020).
Charis mengatakan, UMKM binaannya sekarang sudah mampu berinovasi mengolah kulit kopi menjadi produk unggulan bahkan sebagai kopi untuk kesehatan.
Ia menyebutkan, ada tujuh UMKM diantaranya Agro Kopi yang sudah berhasil membuat produk unggulannya yaitu Green Coffee atau Kopi Hijau. Kopi ini sangat bermanfaat sebagai detok penyakit dan juga bisa untuk obat diet bahkan sangat bagus untuk kesehatan jantung serta untuk kecantikan kulit dimana ampasnya bisa untuk masker.
“Kopi ini baik diminum 15 menit sebelum makan, hasilnya akan terasa kenyang dalam waktu yang lama,” katanya.
UD Cascara Arabica Gayo adalah UMKM yang sudah berhasil memproduksi inovasinya yaitu kopi merah (teh kopi) yang berbahan dasar dari kulit kopi dan dicampur dengan bunga kopi. Kemudian ada UD Inovasi Kopi Arabica yaitu UMKM dengan produk inovasinya tepung kopi. Tepung ini sebagai bahan dasar untuk pembuatan kue kelebihan tepung kopi ini adalah rasanya seperti coklat tau mocca.
Selanjutnya UD Charisma Charita dengan produk inovasinya kopi kuning/teh bunga kopi (arabica coffee blossom). Kopi ini berbahan dasar yang bahan dasarnya dari bunga kopi yang sudah layu coffee blossom ini sangat diminati oleh negara Jepang.
Lalu ada UMKM Selamat Sukses dan Sentosa dengan produk inovasinya Kopi Fermentasi (Strong Wine Halal). Strong wine kopi ini adalah hasil fermentasi dari biji kopi dan sebagai solusi pengganti minuman yang mengandung alhkohol tapi halal, wine ini sangat diminati oleh negara Taiwan.
Begitu juga dengan UMKM Sepakat dengan produk Inovasinya kopi super manis tanpa gula (arabica super honey). Kopi ini rasanya sudah manis seperti gula aren dan UMKM Alhuda Tani dengan pruduk inovasinya Coffee Oven (Coven-90) proses pembuatan kopi ini di oven pada suhu 90 derajat.
Ia menambahkan, harga dari inovasi kopi tersebut bervariasi mulai dari Rp88.000 sampai Rp375.000 tergantung dari tingkat kesulitan pengelohannya. (mc)
